We all know chicken wings can make the tastiest little snack or side dish. Take it to the next level with these super flavourful, no-fry chicken wings.
Serves 6 Prep Time 15 mins Cook Time 45 - 50 mins
Ingredients
1.5 tbs black ground peppercorns
1 tbs sea salt (or to your taste)
1 tbs ground coriander
1 tbs ground cumin
1.5 tsp garam masala or Chinese five-spice powder
0.5 tsp baking soda
0.5 tsp sugar
2.5 kg chicken wings (or drumsticks)
2 tbs olive oil
1 lime
Method
Cover a large baking sheet with foil or baking paper and set aside.
In a large bowl add crushed pepper, salt, coriander, garam masala, baking soda and sugar to a bowl and mix well with your hands.
Add chicken wings and oil to the seasoning mix and toss with your hands until wings are evenly coated. Space the wings on the prepared baking tray, evenly apart. Chill the wings, uncovered, for at least 1 hour.
Remove wings from refrigerator and bring to room temperature. Meanwhile, preheat the oven to 220c and place racks in the top third and centre of the oven.
You're going to bake and then grill the wings so they get extra crispy.
Bake wings on centre rack, turning wings after 15 minutes. Bake until browned and cooked through or for 30 - 40 minutes.
Once they are cooked through, remove baking sheet from oven and turn on oven grill. Let the grill heat for at least 5 minutes. Grill wings on top rack for 3 - 4 minutes or until browned and a little charred. Remove from the oven and turn wings again.
While the wings are resting, thinly slice spring onions and cut lime into wedges.
Garnish the wings with spring onions, lime wedges and serve with crispy and tasty wedges. Enjoy!
TIP: For best results make sure you begin the marinating process at least 1 hour in advance of cooking.
